Cider-Baked Sweet Potatoes

3 Red or Golden Delicious apples, peeled, halved, cored and very thinly sliced
1 tablespoon fresh lemon juice
1-1/2 pounds dark- or light-skinned sweet potatoes, peeled, halved length-wise and very thinly sliced
1/4 cup Martinelli’s Cider or Apple Juice
1 tablespoon butter or margarine, melted

Toss the apple slices with the lemon juice. Arrange layers of the potatoes and apples in a 1-1/2 quart baking dish or casserole. Save the most attractive pieces of potato for the top layer, arranging them in a pinwheel design. Pour the Apple Juice or Cider and butter over all. Cover and bake for 1 hour in a 350° oven. Uncover and bake for 15 minutes. Serves 6.
