Apple Juice Acorn Squash
3 acorn squash
2 apples, chopped
1/2 cup chopped walnuts
1 tablespoon grated orange peel
1/2 cup brown sugar
1/4 cup Martinelli's Cider or Apple Juice
2 tablespoons margarine, melted
Preheat oven to 350°. Combine all ingredients except squash. Cut squash in half lengthwise and scrape out seeds. Place cut side down in baking dish and bake for 25 minutes. Mix the other ingredients. Turn cut side up, fill with apple mix and continue baking for 20 minutes, or until squash is tender. |
